Kacchi Biryani is the most favorite food in Dhaka. And specially the people of puran Dhaka mostly like this kacchi biryani more then three times from a usual man. It is more delicious then other known biryani we eat. It is available in every hotels and restaurants in Dhaka. Not only Dhaka, you also get this biryani in over Bangladesh. Kacchi biryani has more test and more flavor then Pakki biryani. If you didn't know what is pakki biryani let's know. Pakki biryani is that which is cooked separately rice and mutton. At last it mix rice and mutton each other. But Kacchi Biryani is different from Pakki. It is cooked at a time rice with mutton. There will be rice, mutton, potato, others spices.

Elements for Cooking Kacchi Biryani:
- Mutton (1 KG)
- Rice (2.5 KG)
- Greek Yogurt (¾ cup)
- Onion Sliced (3 largesize)
- Ginger Paste (3 tablespoon)
- Garlic Paste (1 tablespoon)
- Lime Juice (1 tablespoon)
- Coriander Powder (1 teaspoon)
- Black Pepper Crushed (½ teaspoon)
- Cinnamon Powder (½ teaspoon)
- Cardamom Powder (½ teaspoon)
- Cumin Powder (½ teaspoon)
- Sugar (½ teaspoon)
- Nut Meg Powder (1/3 teaspoon)
- Mace (1/3 teaspoon)
- Green Chillies (6)
- Cloves (4-6)
- Bay Leaves (2)
- Rose Water (1 tablespoon)
- Oil (½ cup)
- Clarified Butter (½ cup)
- Salt (as tested)
- Flour (2 cup)
Steps to cook Kacchi Biryani:
- You have to wash first mutton and rice properly.
- After washing mix up rice, mutton and other spices except bay leaves, green chillies and clove. Take half an hour to marinate it.
- Fry onion slices until it becomes brown color.
- Boil 5 cups of water. When it done, add rice, clove, bay leaves and 1 teaspoon salt.
- Cook it till it's first boil. After first boil remove it from heat.
- Now add marinated mutton, fried onion, oil, green chillies, salt, boiled potato with rice with it's water in a deep bottomed sauce pan. Spread rice and mix clarified butter with it.
- By mixing water make dough of flour and seal the pan.
- Now cook it by taking one hour. First 10 minutes on high heat, last 50 minutes low.
- Mix up rose water after 10 minutes.
- At last You can serve your hand made Kacchi biryani in font of your family member.
