Rice pudding: Make your home made pudding

Rice pudding making steps:

 Ingredients:

  1. Milk - 1 litre 
  2. Basmati or Jeera rice - 1/3 cup
  3. Sugar - 1/3 - 1/2 cup
  4. Cardamom - 4 pods
  5. Nuts n dry fruits – to garnish
  6. Ghee – 2 tsp (optional)
  7. Bayleaf - 2 nos 
  8. Salt - A pinch (optional)

Method to making process of Rice Pudding: 

Boil milk in a wide bowl and when it starts to roll boil, add bay leaf and slightly crushed cardamom pods. Wash the rice and add to the milk. Allow it to boil in low to medium flame till rice gets cooked well but it should be firm & soft without losing its shape. Keep mixing every now and then and make sure it is not burnt in the bottom. When the rice is almost cooked and the milk is evaporated remove bay leaf(optional) & add sugar and a pinch of salt (optional). After that mix them well. Now Let it boil till the mixture thickens slightly. After that remove it from hit and serve it in a nice bowl ant garnish it with nuts and dry fruits.

Egg Halwa: Make your favorite dish by egg

How to make Egg Halwa -


Ingredients:
  1. Egg- 4
  2. Milk- 1/4 cup (evaporated milk)
  3. Sugar- 3/4 cup
  4. Ghee- 4tbs
  5. Cardamom clove -2
  6. Cinnamon stick- 2
  7. Saffron/ Food color- 1 pinch (optional)
  8. Mawa-  optional (for garnishing)
  9. Almond- as required (for garnishing)

Method to make Egg Halwa: 

Take all ingredients in a bowl and mix them all and make a smooth pest. Now take the paste in a pan (stainless pan), put it on the burner in a medium heat and start to stir. Stir the pest continuously until it become thick and separate from the side of the pan. After that Remove from heat and garnish it as you want with mawa and almond.

Gajar halwa / carrot Sandesh making process

Gajar halwa / carrot Sandesh

Ingredients:

  1.     1kg carrot.
  2.     1 and ½ evaporated milk
  3.     Sugar – 8 tbsp
  4.     Ghee-Ghee – 2/3 cup (clarified butter)
  5.     Pistachios – as required (for garnishing)
  6.     Cardamom clove ~ 4
  7.     Cinnamon stick ~ 4

Method:
Take chopped carrot and boil it until they are soft enough. Then mashed the stemmed carrot in a food processor. Now take a bowl and add mashes carrot and all other ingredients. Now mix them all, After mixing  put them in a pan (stainless pan is better) and keep stirring to prevent burning and sticking to the bottom. Cook until mix is dry and there is no milk left. After that Remove from heat and garnish it as you want.

Kacchi Biryani of Puran Dhaka


Kacchi Biryani

Kacchi Biryani is the most favorite food in Dhaka. And specially the people of puran Dhaka mostly like this kacchi biryani more then three times from a usual man. It is more delicious then other known biryani we eat. It is available in every hotels and restaurants in Dhaka. Not only Dhaka, you also get this biryani in over Bangladesh. Kacchi biryani has more test and more flavor then Pakki biryani. If you didn't know what is pakki biryani let's know. Pakki biryani is that which is cooked separately rice and mutton. At last it mix rice and mutton each other. But Kacchi Biryani is different from Pakki. It is cooked at a time rice with mutton. There will be rice, mutton, potato, others spices.

There is many food lover in our Bangladesh. They love to eat different kind of food. Also they used to love cook food. If you want to cook this Kacchi Biryani in your home I will appreciate you even I can't eat your cooked food. But... I can do something for you. Those who can cook other food they also can cook the delicious Kacchi Biryani. For those people I'm going to share a quick recipe of “Kacchi Biryani” for trying in your home.

Elements for Cooking Kacchi Biryani:


  • Mutton (1 KG)
  • Rice (2.5 KG)
  • Greek Yogurt (¾ cup)
  • Onion Sliced (3 largesize)
  • Ginger Paste (3 tablespoon)
  • Garlic Paste (1 tablespoon)
  • Lime Juice (1 tablespoon)
  • Coriander Powder (1 teaspoon)
  • Black Pepper Crushed (½ teaspoon)
  • Cinnamon Powder (½ teaspoon)
  • Cardamom Powder (½ teaspoon)
  • Cumin Powder (½ teaspoon)
  • Sugar (½ teaspoon)
  • Nut Meg Powder (1/3 teaspoon)
  • Mace (1/3 teaspoon)
  • Green Chillies (6)
  • Cloves (4-6)
  • Bay Leaves (2)
  • Rose Water (1 tablespoon)
  • Oil (½ cup)
  • Clarified Butter (½ cup)
  • Salt (as tested)
  • Flour (2 cup)

Steps to cook Kacchi Biryani:

  • You have to wash first mutton and rice properly.
  • After washing mix up rice, mutton and other spices except bay leaves, green chillies and clove. Take half an hour to marinate it.
  • Fry onion slices until it becomes brown color.
  • Boil 5 cups of water. When it done, add rice, clove, bay leaves and 1 teaspoon salt.
  •  Cook it till it's first boil. After first boil remove it from heat.
  • Now add marinated mutton, fried onion, oil, green chillies, salt, boiled potato with rice with it's water in a deep bottomed sauce pan. Spread rice and mix clarified butter with it.
  • By mixing water make dough of flour and seal the pan.
  • Now cook it by taking one hour. First 10 minutes on high heat, last 50 minutes low.
  • Mix up rose water after 10 minutes.
  • At last You can serve your hand made Kacchi biryani in font of your family member.
